Mediterranean Farro Medley

Serves: 4

Ingredients:
3 cups Farro, cooked
1 pint cherry tomatoes
1 small shallot, finely diced
1 cup kalamata olives, chopped
AVV Olive Oil
Salt and pepper to taste
1/2 cup Feta cheese, crumbled (optional)

Method of Preparation:
Cook farro according to package directions, then set aside for assembly.

Heat a shallow skillet on high heat, add 2 TBSP olive oil and, when smoking, add the cherry tomatoes to char, about 2 minutes.

Turn off heat and add shallots, 1 Tbsp olive oil and kalamata olives, then mix well.

Combine farrow and vegetable mixture in a serving bowl and toss to combine. Sprinkle with optional crumbled feta cheese, if desired.

Serve warm or at room temperature.

NOTE: Kalamata olives carry a lot of salt, so taste before adding more.
