When fried, artichokes develop caramelized savory flavors that harmonize with the bold fruit flavors of the wine.” Robynn Chapman, Wine Club and Hospitality Coordinator Makes: 24-28 Ingredients: 2 15oz cans artichoke hearts, drained, patted dry, cut in half and gently flattened 2 cups vegetable oil Kosher salt, to taste 1 lemon 3 large eggs Fresh parsley, finely chopped 1 cup flour 3 Tbsp parmesan, grated 1 tsp kosher salt 1 tsp dried oregano 1 tsp dried thyme ½ tsp black pepper ½ tsp garlic powder Method of Preparation: Drain artichokes and pat dry, then cut in half and flatten gently. In a small bowl, whisk together the eggs. In a medium bowl, whisk together flour, parmesan, kosher salt, oregano, thyme, pepper and garlic powder. Fill a Dutch oven or heavy pan with vegetable oil, at least 1” high and heat to 360-370°. Working in batches, dip artichokes into the egg wash, then into the flour mixture, shaking off any excess. Carefully place the artichokes into the oil and fry for about 3 minutes per side or until golden brown all over. Remove artichokes from the oil and place them on a wire rack to drain. While still hot, sprinkle with kosher salt and parmesan. Garnish with parsley and serve with lemon wedges or your favorite aioli!
