Flank Steak Fajitas with Mixed Peppers BeefPerfect PairingsEntréeCabernet Franc “When people think of fajitas, or Mexican food in general, usually the go-to beverage is a beer. However, this combination of grilled flank steak and an assortment of peppers lends well to the Cabernet Franc, and makes a perfect pairing.” – Harry Wetzel, Head of Operations/Family Partner – Serves 4 – Ingredients: 1 large flank steak 2 limes, zested and juiced 1 orange, zested and juiced ¼ cup soy sauce 3 cloves garlic, crushed 3 green onions, chopped 1 Tbsp. cilantro, chopped 1 Tbsp. honey 1 shot of tequila 2 tsp. cumin, divided 1 ½ tsp. chili powder, divided 1 ½ tsp. paprika, divided ½ tsp. chipotle powder 1 Tbsp. vegetable oil 1 red onion, thinly sliced 1 red or yellow bell pepper, thinly sliced 1 poblano pepper, thinly sliced 1 Anaheim pepper, thinly sliced ½ tsp. ancho chili powder Salt and pepper, to taste 1 Tbsp. tomato paste ¹⁄³ cup beef broth Salt and pepper, to taste Flour tortillas Optional Toppings: cheese, sour cream, lime wedges, chopped cilantro, guacamole and/or diced onion Method of Preparation: Combine the flank steak, juice and zest from the limes and orange, soy sauce, garlic, green onion, cilantro, honey, tequila, 1 tsp cumin, 1 tsp chili powder, 1 tsp paprika and chipotle powder in a large Ziplock bag. Allow the steak to marinate at least 2 hours, or up to 24 hours. Remove steak from marinade and grill over high heat for approximately 3 minutes per side. Remove from heat, then let rest until cool. Slice steak across the grain, reserving any collected juices. Heat the vegetable oil in a large pan, over medium heat. Add the onions and peppers, then sauté until softened. Add 1 tsp cumin, ½ tsp chili powder, ½ tsp paprika and ½ tsp ancho chili powder. Season with salt and pepper to taste and continue sautéing for another 1-2 minutes. Add the tomato paste and sauté for another 3 minutes. Add the beef broth, stirring to combine, then add the sliced flank steak and any reserved juices. Heat until the flank steak is warmed through, approximately 5 minutes. Serve with warm tortillas and desired toppings.
