Prime Rib of Veal Try these wines with this recipe
1 6-8 pound veal prime rib
16 cloves of garlic, peeled and quartered length wise
Salt and black pepper
¼ cup AVV Olive Oil
Pre-heat oven to 400 degrees
Using a sharp paring knife, insert tip into meat and twist then push in one piece of garlic. Repeat until all the garlic is used. Place meat in a heavy roasting pan and coat with oil, salt and pepper. Place in oven and roast for two hours or until thermometer reaches 130. Remove from oven and put meat on a platter and cover with foil. Let rest for 30 minutes. Slice off of the bone and slice into steaks.
Serves 6-8.
